I just want to preface that I normally LOATHE a green juice or smoothie. I understand their benefits and I wish I was one of those hip people who work out constantly and drink nothing but green juices in the morning instead of my usual giant coffee.
But to my surprise, this one I created is DELISH. This is called a gateway green smoothie because I’ve strategically chosen only mild vegetables, and citrus and berries can mask anything. So maybe one day we’ll go all in on the healthy green juice (think wheat grass, parsley, cilantro, spirullin etc) but for now, this is close enough. Best of all, you can use the same ingredients (the other lemon half for example) for a super yummy salad for dinner.
Gateway Green Smoothie
1 cup of freshly squeezed orange juice
1/2 of an English cucumber (skin on)
1/2 cup of organic blueberries (frozen)
2 cups of organic baby spinach
1/2 lemon deseeded
Add ingredients in the order listed into the blender. Blend thoroughly until extra smooth. Serve immediately over ice.
